Soop Ma Khua



Soop Ma Khua (Small round egg plant paste)

Ingredients

            Small round egg plants           5-6 bulbs
            Mackerel                                 1 fish
            Grilled chilli                            4-5
            Roasted sesame                       ½ table spoon
            Chopped spring onion             1 table spoon
            Fish sauce                                1 table spoon
            Fermented fish sauce              3 table spoon
            Mushroom                               300 g

Instruction

1.      Boil egg plants, mackerel, mushroom, and fermented fish sauce in a pot until cook and soft.
2.      Take out egg plants, mackerel, mushroom from the pot and let them cool down. Save the soup.
3.       Pound the grilled chilli in a mortar
4.      Take the bone out from mackerel, then put mackerel, mushroom, eggplants into the mortar. After that pound them well.
5.      Add the soup that used for boiling
6.      Seasoning with fish sauce, garnish with coriander.
7.      Serve with cucumber and string bean.

Benefit

            Mackerel has high iodine good for preventing Graves' disease. Spring onion prevent us from cold. Sesame also helps to reduce cholesterol. Fermented fish sauce has high calcium help to strengthen bones and teeth.
