Soop Thua (Long Bean
salad)
Ingredients
Long bean 1
cup
Water 1
cup
Roasted Sesame 1 table spoon
Green onions ½ cup
Fish sauce 1 table spoon
Fermented fish sauce 3 table spoon
Round small egg plants 3 egg plants
Steamed mackerel 1 fish
Grilled chilli peper 4-5 chilies
Long bean (string bean) 3-4
Dried Lentinus polychrous ( a kind
of mushroom) 1 cup (optional if available)
Direction
1.
Grill
the chilli until you get the smell, but do not burn it.
2.
Boil
the water, put the round egg plants, string beans, long beans, mackerel, and 3
table spoon of fermented fish sauce, until they are cooked. ( if you want to
add Dried Lentinus polychrous, you have to soak it over night, then slice them
before boil them with other vegetables in the next step)
3.
Put
all the beans, vegetable, and mackerel out of water, put them aside, but save
the soup.
4.
Pound
the chilli in a mortar well, then add mackerel, beans and egg plants, and pound
them together again.
5.
Add
sesame, fish sauce, and pound them gently
6.
The
mixture will look like a paste, and then add some soup from the pot but not too
much.
7.
Put
the salad in a bowl garnish with green onion, serve with steamed sticky rice
