Au-Poo



Au –Poo
(Rice-Field crab soup )

Ingredients

            10 rice-field crabs (Poo na) also known as black rice crab
            1 cup of freshwater snail
            Fish sauce
            ½ table spoon roasted ground chilli
            5 green onion (or spring onion )
            1 cup of sweet basil
            1 cup of water

Instruction

1.      Break the crab’s shell; keep the crab’s fat (the yellow part) which normally stick inside the shell. Take it aside.
2.      The rest of the crab put in a mortar and pound well add water about a cup, then mix well.
3.      Take the mixture from the mortar, then pour it into the strainer. Discard the shell on strainer.
4.      Pour the mixture to a pot, add crab’s fat, chilli, and fresh water snail. Mix well.
5.      Heat the mixture with medium heat. Seasoning with fish sauce, add green onions. You need to stir it often until cooked.
6.      Remove from the stove. Serve with steamed sticky rice.  

Benefit

            Black rice crab is a cheap protein and calcium source. The sweet basil is good for people who want to shred some extra pounds. Sweet basil has high vitamin A, which is good for your eyes too.
